I think the biggest problem with washing transformers in the dishwasher is whether they really get a thorough rinse with clean water so that no soap, rinse, or other potentially conductive, reactive, or corrosive residue is left behind.  I don't know how well the old fish paper and similar stands up to water infiltration either.

 I do risk management which makes me risk averse and I see no upside of washing the inside of a transformer and significant downside risk.  Stan Griffith discusses some of these issues in his book on restoring tube type Tektronix scopes.

I agree with you on the meters, dial scales, etc.!  It is also easy to warp many of the dials.
