Once you get the major crud off the zinc Heath knobs, head over to the neighborhood motorcycle shop and pick up a tube of SimiChrome.  It's used to polish aluminum on motorcycles.  

It'll make the zincknobs look like chrome for a long time.

A small tube will last years!

Does anyone know of a source for the metal disc in the middle of the knobs?
